When I read the recipe, I thought that sounds like a winner! When I tasted it, I was right! Great food, like great music, sounds great! Kudos and thanks to the musical chef/culinary conductor!

Ingredients

  • 4 tbsp soy sauce
  • 2 tbsp ground ginger
  • 3 tbsp maple syrup
  • 3 tbsp rice vinegar
  • 1/2 tsp. red pepper flakes
  • 1 package tofu
  • vegetable oil for frying
  • chopped scallions and pickled ginger for garnish

Mix the first five ingredients in a small bowl.

Drain tofu and dry with paper towels, then cut into 9 pieces.

Heat the oil in a non-stick skillet over medium-high. When oil is rippling, carefully add the tofu and fry for 4 minutes on each side.

Remove the tofu and place on paper towels. Pour out all the remaining oil from the skillet.

Add the soy sauce mixture to the pan. Place back on the heat and add the tofu, turning so that it caramelizes nicely on all sides.

Serve right away with rice, and garnish with the scallions and ginger.
